What a year! So many exciting new things happened. Among many things, I moved across the country, started a new job I love, took the longest flight of my life, gained a new nephew… And um, I GOT ENGAGED! Here’s a look back at 2018!

San Antonio has long been a city I’ve wanted to visit. I learned all about the Alamo during Texas history classes in grade school, so it’s always been on my to-do list. When I attended college in Corpus Christi, however, I never managed to go visit, even though the city was only 2 hours away. So, having made it a goal to visit more Texas cities this year, I planned a Fourth of July trip with my fiancé to the South Texas city. A weekend in San Antonio is plenty of time to hit the highlights, however there is so much to see in this charming city you will definitely want to return!
Are you really a Texan if you’ve never taken pictures with the bluebonnets? Well, up until a few weeks ago, I never had, and I knew that needed to change! As a child growing up in this great state, I learned all about its history (maybe even more than world history, eek) which included ingraining in my mind that the bluebonnet is our state flower. And the bluebonnet pictures I see every spring on facebook have been a point of nostalgia. So I set out on a mission to find the best bluebonnets in Texas this spring and found them in the small town of Ennis. This is part of my Texas Series!
When I originally planned my Europe backpacking trip, I had pretty much every European country on my itinerary. Morocco and Egypt even popped on there a few times. Given my time and budget constraints, I had to scale it back. I embraced the fact that I’m a slow traveler; I like to spend more time in one place than to hop around every few days to a new city. I can experience the culture, people, food and atmosphere better this way. So unfortunately, more southern countries like Spain and Italy got axed. I vowed that I WOULD visit them eventually. And amazingly, I was able to make that promise come true just 2 short years later. Barcelona was an easy trip from France, so I made it happen! I was born and raised in Texas. My Texas pride runs deep. Growing up and throughout college, however, I wasn’t able to fully experience all that this great state has to offer. Now that I’m a resident again after 6 years, I intend to fully explore the Lonestar State in all its glory. This is the Texas Series! Monahans Sandhills State Park is today’s pick.
At some point in my early twenties, I decided that I would backpack through Europe. Now, having just graduated undergrad and currently making plans to go to vet school, I had no idea when I would actually accomplish that goal. Fast forward a few years and I’m sitting on my couch in St Kitts and I decided, as a break from studying, I would make a rough itinerary of where I would go on this imaginary trip. Well, it became a slight obsession, and I’ll sheepishly admit I had an entire Excel spreadsheet compiled of a two-month adventure through Europe. When I finally made it back stateside for my last year of vet school, I mustered up the guts and used my airline points to buy a round-trip ticket. The months leading up to the trip felt like a dream, and I didn’t actually believe it was happening until I stepped off the plane in London. I had traveled before, but never completely solo. It was exhilarating and scary all at the same time. I was finally a solo female backpacker in Europe, something I had read blogs upon blogs about, and was now actually doing it. And I had the best time!
If you’re looking for a quaint romantic getaway in France, look no further than the charming city of Annecy. After settling in to Lyon, our home base for my 6-week stay in France, my boyfriend and I decided to take the short train ride to explore the medieval town. Although I absolutely love visiting new places, only a handful of cities have immediately captured my heart upon arrival. Annecy is one of them. The winding medieval streets with colorful facades, the canal with arched bridges, and the lake with spectacular views of the mountains creates a certain magic that can only be felt by spending a few days in this cute town. There are so many things to do in Annecy, no matter the season. We visited in November, and although it was cold and a little rainy, we had a great time. Annecy is definitely a must-see while in France!
St Kitts will always hold a special place in my heart. I lived there for almost 3 years while I attended veterinary school. It’s a beautiful island with a classic Caribbean vibe. The island is a popular cruise ship port but is a great vacation destination in its own right. I’m lucky to have been a resident for so long. I was able to experience so much of what the island has to offer during my time there. I knew I wanted to be a veterinarian since I was a little kid. I fed all the neighborhood cats, nursed my Chihuahua after a stray dog attacked him, and cried when Mufasa died. Animals were an integral part of my childhood, so it was never a question during high school or college that I would go to veterinary school. I just never quite imagined that I would go to a Caribbean veterinary school!
